Saturday June 20th:
11.30 onwards Feast guests arrive, to be greeted with Scandinavian-inspired cocktails featuring sloe gin and elderflower cordial. Bar serving Scandi cocktails, Piston Head lager, Rekorderlig cider, Absolut vodka and Linie aquavit will be open.
12.15-12.30 Chloe Avery welcomes everyone to the feast
12.30-1.30pm SMORREBROD (OPEN SANDWICH) DEMO with Trine Hahnemann
1.30-2.30pm LUNCH Open sandwiches designed by Trine: rullepolse, liver pate, herring and potato
2.30-3.30pm DRINKS DEMO Around Scandinavia In A Bottle: BBC Two's Food & Drink series' drinks expert Joe Wadsack takes Feast guests on a tour of Scandinavia's beers, wines and spirits
FLORAL HEADDRESS DEMO Making Scandi-style floral headdresses with celebrity florist Rachelle Cousineau and Swedish food stylist Liselotte Forslin
3.45-4.45pm Valentine Warner makes Fried plaice and brown shrimp, Smoked trout and Chopped venison on Peter's Yard crisp breads and talks about his love for Scandinavia
5-6pm Cooking over fire with Swedish Michelin-starred fire pit chef Niklas Ekstedt: Smoked halibut, matjes browned butter, horseradish, dill and salsify and Baked rhubarb, strawberry, liquorice, crumble and whipped cream
6-7pm DEMO Joe Wadsack makes the ultimate Scandinavian cocktails (available for sale at the bar)
7.30pm Trine Hahnemann introduces the Feast meal
8.00pm-late MIDSUMMER FEAST Menu designed by Trine Hahnemann: salmon on crisp bread, whole spit-roasted lamb, fresh summer salads and potatoes, finishing with strawberries and cream.
Scandinavian drinking songs.
BAR AND BAND: Guests drink and dance around to music from the FikaFolk band, lit by a bonfire.
Sunday June 21st:
9-10.30am BREAKFAST Scandinavian-style breakfast: mueslis, hams, cured fish, eggs, cheeses, breads and berry jams
10.45-11.45am QUESTION AND ANSWER panel session chaired by Chloe with Trine, Niklas, Joe, Ole-Martin Hansen and Liselotte
12-1pm DEMO Salmon masterclass with fourth generation Norwegian salmon-smoker Ole-Martin Hansen of Hansen & Lydersen: learn how to make your own gravlaks
1.30-2.30pm DEMO + LUNCH Trine Hahnemann demos how to make a perfect Scandinavian smorgasbord. Summer smorgasbord for lunch: crispbreads, Castello cheeses (smorging concept), pickles and salads.
2.30-4pm Walk around the stunning Harptree Court with Liselotte Forslin and owner Charles. Liselotte gathers ingredients to make rosehip and nettle soups and wild quesadillas.

2.30-4.30pm DEMO Modern herring masterclass with Danish ‘Herring Queen’ Silla Bjerrum (Founder and Executive Chef, Feng Sushi)
4-5pm DEMO Trine Hahnemann demos a Danish cake table plus Swedish Fika: tables laden with cakes, biscuits and coffee for all the guests to enjoy.
5pm GOODBYE AND THANK YOU from Chloe. Guests leave with Feast bags filled with Scandi foodie goodies.
